Jennylynd (Lindy) James was born and raised in Trinidad and Tobago. Why was a woman of Caribbean descent living and working in Ireland? By a stroke of mad luck and with a keen sense of adventure, Jennylynd left a comfortable job as a Food Scientist in Westlake, California to embark on a journey that would change her life forever. In Ireland, she first worked for a food company then developed her own range of Caribbean style sauces and seasonings. She ran this business for five years with ’artistic flair’. Her tumultuous life experiences while learning the lingo, customs, and lay of the land in Ireland have been the inspiration to create ’Escape from Eire’. Jennylynd now lives in Bloor West Village, Toronto, Canada where she has embraced self expression in art, music, and writing as life’s greatest passions.
