About Marie Lastrapes: Life and Flavor in the Creole Tradition I would like to introduce my grandmother, Marie Lastrapes. Undeniably the best cook in Acadiana. At one time or another most in the area has had the pleasure to attend a function she has catered. They know like I know, good Creole Cooking doesn’t get any better than this. Marie’s Catering of Opelousas, Louisiana was in business for 40 years. She has catered for Mayors, Governors, the "who’s who", brides to be, and better yet all who she considers friends and family. Satisfaction is always guaranteed and I can guarantee you that you were satisfied. Have you ever seen a cook never measure and always get it right? I have! Have you tasted food that was perfectly delicious as well as perfectly presented? I have! As a little girl I’ve had the pleasure of working side by side in the wee hours of the night to help prepare for her customer’s special occasions. She cooked with love and respect and by the reaction of those who taste her food, it shows. As a teenager, I remember working those 18-hour days, cleaning up after a Wedding or special occasion and my MaMa putting on her dancing shoes with my dad and going to a Zydeco at Slim’s Y-Ki-Ki or Richards Club. The rest of the house would be dead tired! She truly was the hardest working woman I know...the fountain of youth...an inspiration. We have put together this Cookbook for you to enjoy the culture, life & flavor of our people, the Creole people of Southwest Louisiana. She was a Blessing and one divine Lady we cherished until just before her 97th Birthday.
