José Juan Buenrostro-Figueroa, PhD, is Titular Researcher at the Research Center for Food and Development, A.C., Mexico. He is a food engineer. His MSc and PhD degrees were in Food Science and Technology. Dr. Buenrostro has experience in bioprocess development, including microbial processes for enzyme production and recovery of bioactive compounds, valorization of agroindustrial byproducts, and extraction and characterization of bioactive compounds from plants and agroindustrial wastes. He has published 40 papers in indexed journals, 25 book chapters, five books as editor, four patent requests, and more than 70 contributions at scientific meetings, with over 1160 citations and h-index of 18 (Google Scholar database). Dr. Buenrostro has been a member of SNI (National System of Researches, Mexico), the Mexican Association of Food Science (AMECA), and the Mexican Society for Food Protection affiliate of the International Association for Food Protection.

Mónica L. Chávez-González, PhD, is a Research Professor at the School of Chemical Sciences of the Universidad Autónoma de Coahuila, Mexico. She is a pharmacobiological chemist; her master’s and doctoral program were in Food Science and Technology. She is the General Coordinator and founder of the Bioprocessing Mx-LATAM Network, whose objective is to promote R&D in the area of bioprocessing through interaction between universities, institutes, research centers, and relevant industries in Mexico and Latin America. She has been awarded the Latin American Women in Chemistry Award in the category of ＂Emerging Leader,＂ granted by the American Chemical Society and the Latin American Federation of Chemical Associations (FLAQ). Dr. Chávez-González’s expertise is in the areas of fermentation processes, microbial biotransformation, enzyme production, industrial food waste valorization, extraction of bioactive compounds (antioxidants), and chemical characterization.

Theresa Obiajulu Egbuchunam, PhD, is a Professor of Materials Chemistry at the Federal University of Petroleum Resources, Nigeria. She graduated from the University of Benin, Benin City, Nigeria, where she received her MSc and PhD in Industrial Chemistry. She also studied abroad in the Chemical Engineering Department of Izmir Institute of Technology, Izmir, Turkey, where she carried out some aspects of the experimental part for her PhD thesis. She has carried out research extensively in her area of expertise and has published more than 45 original scientific papers in local, national and international journals, chapters in books and co-authored several books. Her publications cover topics that include metal soaps from vegetable oils and applications, cellulosic polymers and their applications, epoxidized vegetable oils for poly (vinyl chloride) formulations, nanoparticles, and environmental studies amongst others. Her research interests are in materials chemistry aimed at developing industrially useful, value-added products from locally available resources. She is a recipient of TETFund grants and the research grant scheme from Kastamonu University, Turkey. She is a chartered chemist and professional member of the Materials Society of Nigeria and Chemical Society of Nigeria. She started her academic career as a lecturer in the Chemistry Department at the College of Education, Warri, before joining Federal University of Petroleum Resources, where she was the Head of the Department of Chemistry from 2009 to 2013 and Internal Member of Council from 2013 to 2017. Professor Egbuchunam also served as Director of the SERVICOM Unit and Director, Federal University of Petroleum Resources (FUPRE) Unit (2021-2023). Professor Egbuchunam is presently on sabbatical appointment in the Department of Pure and Industrial Chemistry, University of Port Harcourt, Rivers State, Nigeria. She has a wealth of experience in teaching, research, and supervision of students’ projects at both the diploma (NCE), undergraduate and postgraduate levels. She is a member of the editorial board of the Petroleum Training Journal.

Leonardo Sepúlveda Torre, PhD, is a full Professor at the School of Chemistry at the Universidad Autónoma de Coahuila, Saltillo, Coahuila, México, where he is also a leader of the Bioprocesses and Microbial Biochemistry Group. His postgraduate studies were related to topics on food biotechnology in the Food Research Department of the UAdeC. In 2011 he made a research stay at the Institute of Biotechnology and Bioengineering at the University of Minho (Uminho), Braga, Portugal. He also worked as a collaborator at the Center of Biological Engineering in Uminho, Braga, Portugal, with the link project ＂Biotechnologies for Regional Food Biodiversity in Latin America.＂ He participated as author and co-author in 35 scientific articles in indexed journals, several books, and 24 book chapters, and he holds two national patents.

A. K. Haghi, PhD, is a retired professor and has written, co-written, edited or co-edited more than 1000 publications, including books, book chapters, and papers in refereed journals with over 3800 citations and h-index of 32, according to the Google Scholar database. He is currently a research associate at the University of Coimbra, Portugal. Professor Haghi has received several grants, consulted for several major corporations, and is a frequent speaker to national and international audiences. He is Founder and former Editor-in-Chief of the International Journal of Chemoinformatics and Chemical Engineering and Polymers Research Journal. Professor Haghi has acted as an editorial board member of many international journals. He has served as a member of the Canadian Research and Development Center of Sciences & Cultures. He has supervised several PhD and MSc theses at the University of Guilan (UG) and co-supervised international doctoral projects. Professor Haghi holds a BSc in urban and environmental engineering from the University of North Carolina (USA) and holds two MSc degrees, one in mechanical engineering from North Carolina State University (USA) and another one in applied mechanics, acoustics, and materials from the Université de Technologie de Compiègne (France). He was awarded a PhD in engineering sciences at Université de Franche-Comté(France). He is a regular reviewer of leading international journals.
