From the introduction: after researching diets and being overweight, "I began to think that maybe food intolerance was the problem. Now I don’t mean the type of intolerance that some people, myself included, have to individual foods or food chemicals. I am talking about something much broader - the way we eat food today, the Processed Food Diet itself.

If you eat a Processed Food Diet you will be eating a lot of industrially mass produced and ultra-processed foods. In contrast, if you eat a Healthy Food Diet you will be eating mainly foods that are fresh and natural - foods that have not been altered in a factory. Most people will eat a mix of healthy and processed food meals but some people will eat mainly processed food or healthy food. I assumed that I was eating a Healthy Diet but I was wrong. Like everyone else I had been conditioned into thinking some foods were healthy when they are not.

Now, I am not saying that the Healthy Food Diet is the best diet and the Processed Food Diet is an evil to be avoided. If the Processed Food Diet was harmful all the time, for everyone, then obesity levels would be even higher than they currently are. What I am saying is that, for some people, the Processed Food Diet leads to excess weight and poor health and that some of these people are so intolerant of the Processed Food Diet that there are aspects of it that they need to avoid just as if they had a traditional food intolerance or even allergy. If they don’t, they will keep getting heavier and develop a range of health problems some with life altering results."
