The present research work proposes to register the technical and conceptual bases by means of a recipe book and an inventory of tourist attractions for the design of a route in the parish "Selva Alegre", in order to value the Gastronomy of the parish as Intangible Cultural Heritage of Ecuador. The research is structured in five chapters which are detailed below: In the first chapter, the research problem is contextualized, starting with a brief description of the parish and its gastronomic situation, then, the study objectives and the research question are raised, highlighting the importance of reactivating the gastronomy of the parish, as the main axis.
