My name is Jeff Schabel and I have been working in the custom and retail meat business for over 35 years. The retail meat business is changing rapidly. With the rapid change comes more questions from the consumers. There is not a day goes by that I do not get asked some question about certain cuts of meat, questions about items listed on a packaging label or “is there a cheaper cut of meat I can use for my recipe”.
Consumers today are truly more interested in knowing what they are eating. They want to know that they are getting healthy Beef, Chicken, Pork and Seafood. Quality and nutritional values found in the foods they and their families eat are becoming more important to them.
With the cost of Beef,Pork,Chicken and Seafood rising so rapidly, customers now are asking more questions about how to save money shopping our meat department. Over the many years of working in grocery store meat departments, it just kills me to see how little people know about buying fresh meat and poultry. The amount a money they waste with the buying decisions they make is over whelming.
Anyone who has ever worked in retail grocery knows that there is no extra time to really spend with customers. They keep the hours so tight, that the best you can do is just try and get your job done. This means that employees are less likely to spend any extra time helping a customer.
